Sunday Mornings

Do you have a day during your weekend where you make a special breakfast? Maybe its French Toast, or eggs, bacon and sausage, home fries maybe? Or, pancakes perhaps? Mmmm...all sounds so delicious!

We tend to make a different type of breakfast each weekend here. Mostly on Sundays. I love breakfast! I love variety with breakfast too. Some of you may remember an oatmeal pancake recipe I posted a while back. Well...I have another favorite pancake recipe to share. This one isn't quite as healthy as the other recipe but they taste so very good! I made these pancakes this morning and added blueberries. Yum! I hope you'll enjoy them on some weekend morning at your house. :)



Feather-Light Yogurt Pancakes
Yields 12-16 pancakes

2 Cups flour (I substitute 1/2 wheat flour for a 1/2 cup of the white flour)
2 tsp baking powder
1 tsp baking soda
1 T sugar (I've used Splenda here and the pancakes still come out very good)
1 tsp salt
1 cup plain yogurt (I use fat free Stonyfields yogurt)
1-1 1/4 cups milk
2 eggs slightly beaten
1/4 melted butter or margarine (I use half this amount. We don't really like a lot of butter taste with our pancakes)

Mix dry ingredients
Mix wet ingredients

Combine we and dry ingredients and stir just until dampened. Pour 1/4 cup batter on hot greased griddle for each pancake.

You may use "Eggbeaters" and canola oil to substitute for eggs and margarine for low cholesterol version. (I haven't tried this yet but its nice to know the option is there)
